Title: Coffee Cake

1 Cake compressed yeast (2 if time is limited)
1 1/2cLukewarm water
1/2cSugar
1 3/4tsSalt
2tbCinnamon
1 Egg, well beaten
5cFlour
1tbGrated orange peel
3/4cChopped raisins
1/2cChopped nuts
1/4cMelted shortening

Soften yeast in lukewarm water. Add 6 tablespoons of sugar, the salt, melted shortening, and egg. Add raisins, orange peel, and flour, beating thoroughly after each addition until a soft dough is formed. (The dough should be softer than for bread). Cover with a warm, damp cloth; allow to double in bulk. Work down and form in two loaves. Place in well-oiled pans. Sprinkle with chopped nuts, cinnamon, and 2 tablespoons sugar. Allow to double in bulk. Bake in hot oven (425ø F) 30 minutes. 2 small loaves. The Household Searchlight - 1941
